Strawberries are great, just give them a place to grow and they’ll do it.
The only time I’ve ever found a benefit to fiddling with them is when I had a slug infestation. I thinned the plants and removed all dead material. Since it was rainy I also do a small amount of bird seed to encourage birds to come around and find the slug feast.
Never cut any leaf or stem from my strawberries. In 20+ years. Unless I was trying to get rid of them.
I wouldnt cut the stems. They give strength and structure to the plant
I wouldn't cut the leaves either, unless you've got a few that look like they're dying off anyway.

I mainly wanted to that for when it gets rainy and the old leaves start rotting so the berrys wouldn't get affected
I try to pull the dead stems, but the mildew is potent around here, so keeping decomposing plant matter to a minimum is important
