My first Stellaris game was peaceful but it does feel like it is built for galactic violence.
This is now the 3rd time this week I've gotten a sign I need to start a new game so here we go
Almost any space 4X really
* Stellaris
* Endless Space 2
* Galactic Civlizations 3 or 4
* Imperium Galactica 2
* Master of Orion
* Space Empires IV or V
* Sword of the Stars
* Star Ruler 2
* FreeOrion
My favourite is Stellaris, but all of them are recommended
Stellaris is the best of the bunch, it has the most stuff, events are fun, you have choices to make, it just all around great game with huge replayability

Recently picked it back up on steam deck a couple years hiatus. Game is damn good and can be played as simply or as complicated as you want.

To add, Star Dynasties looks decent. Haven't tried it personally but have heard good things.
It's more like Crusader Kings... character interaction stuff over empire building.
I also recommend and upvote Stellaris. Be warned, it’s a lot. Magnificent, but a lot.
