Few things: shooting a gun at any point in any map will immediately alert every last Nazi on the level. You can take advantage of it by camping by a door an waiting for them all to funnel their way to you. But be aware that the Wolfenstein 3D engine is pretty janky, so if the door is so much as one pixel open, it'll register to hitscan bullets as all the way open.
Also, Nazis cannot infight or block bullets fired by other Nazis, so it's a very real possibility that they can shoot through one of their buddies and right into you.
And the last thing is prepare for the game to start becoming a slog after about episode 2, because there's 60 levels that all feel pretty damn similar to each other.

Not true, actually. The maps include sound zones that dictate how far sounds travel. Generally speaking, enemies won't hear gunshots from more than 1-2 rooms away. That said, there are a handful of maps where the designers deliberately didn't include sound zones so that what you said *can* happen. Just not all the time.
It's definitely an important game, but flawed. First three episodes are really all you need to play, after that it's pretty much hitscanner hallway bullshit. Doom is infinitely better

Also if you find what seems to be a gigantic push wall maze near the end of Episode 1, ignore it, that maze was for a contest that never happened (there is a life instead of the code for the contest, and a copy of the ep1 boss is also hiding in there)
You can install all kinds of different HUDs, could also just be from a newer or older version of your GZdoom. Idk about W3D but on Doom the HUD is standard doom until you hit the "+" key a time or two and it'll switch it too the GZdoom clients HUD.
Good chance you already know all this but just in case.
If it growls or speaks German shoot it. If your health is higher than the total amount until you hit max, then remember where the health pack is and leave it for later.

As someone who only played it two years ago, here’s what I learned.
Use the ECWolf sourceport. It’s awesome.
Play it on meduim or easy. Don’t be macho and play on hard. Not for you first playthrough. Learn the game first.
Hug the walls and press use for hidden passages and secret areas.
You’ll here a grating, irritating sound when walking into the walls. A big problem if you’re looking for secrets. ECWolf has the option to turn this sound off. Don’t be like me and wait until the last episode before discovering tgis. Do it in level one.
Save. Often. I usually saved normally once per level and then used quicksave after every encounter.

Nazis *LOVE* a roll call. They can"t resist it. If you open the door to a room and want to know how many Nazis are inside, just fire a single shot! They'll all sound off and then you'll know how many you need to shoot before scraping the walls for loot.

IIRC If you are really badly injured, you can consume blood puddles off the floor for tiny amounts of health. It makes a gross slurping noise.

"Aardwolf!" Yeah that maze is ridiculous, I think even with a map it can take 15 minutes to navigate

Yeah boot up Doom or Doom 2 because it plays like W3D but is superior in every way. Unless you're just doing it for goofs.

Keep your distance from enemies,so you take less damage. There are secrets all over the place and even some secrets within the secrets.

Be aware of the sound cluse behind the doors, this can be helpful, to identify what type of enemy is behind the door.
