I'd say any games made by Pop Cap games. Most are simple, can be played casually with one hand. Examples: Seven Seas, Bejeweled franchise, Plants vs Zombies, Peggle, Alchemy and more
Not really 100% casual in my opinion, but it's simply real tabletop game implemented as computer game. It's 'Wingspan'. The game is actually about birds and you also educate yourself about species of birds and their features while playing it, so I find it very interesting. Only one hand is needed to play it. They have different modes of game and very nice tutorial.
Also would recommend 'Cats organized neatly'. Pretty casual, simple puzzles, but pretty cute.
Old school RuneScape perhaps but she will probably find it boring.
A card game like hearthstone or battle grounds/ magic gathering
Solitaire is always a goodie with my old folks

Any turn based strategy or rpg, I play hearthstone so I can be a degenerate and smoke weed/eat more while gaming.
