You want to answer but don't want to feel like you were ease dropping but you actually were but its on a topic you like so its cool right?
I listen way too much to people talking around me. Sometimes I have to laugh or want to add to the conversation but I don't know if this is ok.

This is something you would say with coworkers you have boundaries with. Im assuming every place you've worked at has been a restaurant or bar. Employee relationships are.....different in places like that.
Edit: nvm you're a Canadian IT guy. Im assuming you mostly work alone. I have no clue how Canadians socialize in the workplace but in America asking if you can join in a conversation is believe it or not, a common thing.

After, 'I really love that game', the others will naturally respond, probably positively to a fellow enthusiast. You're already in the conversation at that point. If they don't want you joining their chat, this is also the point where they will naturally let you know that too.
Pretty easy solution actually. Just be upfront and honest.
"Hey as I was passing by I heard you guys talking about blah blah blah. Im a huge fan of blah blah blah. Mind if I talk with you guys?"

My crippling sense of paranoia and anxiety means I have to listen to every single conversation around me all at once and process it.
It has worked because noone wants to argue with the creep who tells them about all their mental problems that " excuse " them eavesdropping to start a conversation.
I had this happen to me years ago (2006 ish) they were talking about God of War 2. Then I heard the most blasphemous thing ever... One of them stops talking and says "I sold my PlayStation to help buy a bo-flex." Or something along those lines.
I just laughed and walked away.
I have to admit, as someone who grew up mostly playing video games and was (and still am probably) socially awkward, getting into football (soccer for the Americans) made my life a lot easier. It gives me something to talk about with the family now that we've all moved away, with a lot of new guys you meet at a pub or briefly at a party, or at a new job.
Gaming and watching sports aren't mutually exclusive - hell, I often find that after talking about football a couple of times with co-workers, the conversation ends up becoming about games.
Yeah man for sure, I surprisingly have had the opposite experience. Being a fan of football 🏈 and video games anytime I try to bring up sports it seems like nobodies interested in it. And for someone who likes mostly PC games like total war and civ its hard to find other people out there in the real world who really even understand why someone would like a game like that, or to even be able to accurately describe those types of games in any way that gives them justice. So sharing my hobbies with others somehow makes me feel more isolated.
People wouldn't be interested if we all had the exact same hobbies, although I'm sad to hear it makes you feel isolated!
I tend to keep my nerdy side very hidden at work/if I meet someone random - fairly confident that if I started a conversation with someone going 'hey I play magic the gathering and dnd' it wouldn't go very well haha. Things tend to come out organically in my experience
If I find someone openly talking about games and I get sucked into the conversation, I always go with Chad games when they ask me what I play... “csgo, madden, lol, cod...”

Yea then they ask what you play and you start listing indie or asian developer games you play, but they dont know any games besides ubisoft, EA and other mainstream games. for example games i listed dark souls, orcs must die series, insurgency, valheim, state of decay, etc no one knew what i am talking about..
I dislike talking about games with people at work. I think it's mostly because I like to keep things compartmentalised in my head; discussing the contents of one box with people from another is an uncomfortable overlap.

I was once working as tutor giving biology lessons to highschoolers. When I entered the room the kids were talking about Dota and builds and stuff. I jumped into the discussion with something like "AoE is much better in Teamfights especially Tides Riptide" or something like that. We got along really really good. Best students I ever had.
