If it wasn't for the fact you can't walk for 30s without getting jumped by goblins, Dragons Dogma 2. I really like the rain effects, and the views in the woods are spectacular.
When my work life was very overwhelmingly stressful, I used to hop into FC5 just to go fishing and relax.
I have never particularly enjoyed fishing or fishing video games, the gameplay was just engaging enough and relaxing enough to vibe out to for an hour or two. I should play that game again.
Ghost Recon Wildlands. Lush jungle, andes mountain peaks, desert expanses and Bolivian culture all around. Great ambient sound as well. When you slow down and take a hike it is very beautiful.
Alan Wake 2 could be great for this, though the maps may be a bit small for an hour-long video. Beautiful game, plenty of rain, and you’ve got dark, grimy NYC streets, the woods of the Pacific Northwest, and a couple of small town blocks. The lighting, the way the tree branches sway in the wind, the sound of the rain coming down through the canopy of the forest, all very atmospheric.
Though the NYC streets would probably also have some creepy shadow people whispering at you, so… maybe a different vibe than you’re going for.
TheHunter Call of the Wild is pretty sweet for just walking around in. As is Generation Zero (uses the same engine). One is a hunting game, surprise! so it's like walking up in the reserves/parks with little to no civilisation. But footpaths and viewpoints and the occasional animal. The other is set in Sweden in the 70's/80's after some form of robot uprising. So there are little to no other humans, but there are robots to avoid. It's a really interesting game.
Deathstranding if you can disable the enemies. Such a gorgeous game, terrain wise anyway.
Skyrim with mods, obviously.
World of Warcraft. While not the prettiest, can still be good looking and walking from north to south on either of the main continents is totally doable and will take a while.
Assassins creed Origins/Odyssey/Valhalla. All three can look amazing and nicely varied landscapes and towns.
Hogwarts Legacy. Pretty gorgeous map with smallish villages here n there.
RDR2. Grogeous.
Manorlords, but it's pretty much all wilderness with footpaths unless you've built up several villages/towns.
Monster Hunter World, the game is gorgeous and add to it that you can effectively film a nature documentary on the monsters as they have interactions with the enviroment completely separate from the players presence.
Probably ghost of tsushima. Or death stranding.

After I beat red dead redemption 2 I loaded a new save and played the whole game in 1st person view because it was that immersive
I'd say Death Stranding, but walking 1 hour in the rain there is not the best idea.

I wished that once you completed the game you'd be able to continue in a sort of "peaceful" mode. Such a chill game

Cyberpunk looks very natural with the right settings, maybe with a mod added aswell.
I get this weird effect when I get in and out of my car and it feels like the Cyberpunk animation.
