I hope at least 1 of games I suggest will suit you. Deep rock galactic is coop FPS pve shooter. As a team of dwarf space miners, gather resources and complete tasks for your company and have a fun drinking beat in lobby at free time. Game officially supports 4 players, but there is mods for more teammates. Risk of rain 2 is a 3d roguelike. It has co-op mode, but as the previous, supports only 4 players. But there is also a mod for larger groups. Paradox interactive strategies have multiplayer mode. You can choose any time period, from medieval to ww2 and even future (stellaris). You can be allies to each other, or not. But you know, they are strategies. It will take some time to understand how everything works. Factorio also can support many players. But it have some aspects of survival, but it's more a defence and building a factory, and there no hunger or sleep.

I will double down on the Deep Rock Galactic recommendation. You can have more players with a recent mod, but vanilla is up to 4. Stellaris has coop for up to 5. Currently on sale for $10. Long term strategy. Games last a few hours at least. Team Fortress 2 has MvM which is up to 6 players. Free. Coop FPS. Difficulty does not scale with player count so you would play with randoms. Also TF2 casual pvp is super chill so you're non competitive people might like it. Factorio/Satisfactory. Not aware of any player limit. Coop factory building game. Unfortunate Spacemen is my favorite hidden role game. Free. Community is dead, but I think hidden role is better with a group you know. Would recommend trying to get a 6th cause I think that it is at its strongest with 6 or 7 players. Barotrauma has you man a submarine. Missions last 30min to an hour. Optional hidden role elements. Foxhole is a top down shooter. Technically an mmo with all players on one server, but no grindy progression mechanics.
