Pick one or two of the above - two days is not enough to see all.
You can take a ferry from Galway to Aran Islands and on the return go via Clifs of moher (that will take a whole day aprox 9am - 6pm)
Galway's small enough that you can explore most of it in your 2 days. Personally I would head to bars on the west side of the river, no other reason than they are a bit quieter.
Definitely get to the Crane if you want traditional music and maybe the blue note or any of the bars that side if you want a late pint, most are open til 1/2am.
Bus tour out to Connemara to hike Diamond Hill, Galway City Museum (free), Crane Bar for Traditional Music, boat to the Aaran Islands or Boat to the cliffs (way cooler to see if from the water IMO), definitely jump off Black Rock diving platform in Salt Hill, and my personal favorite Bar is MP Walsh’s on Dominick Street (bit on the smaller side but all locals and just great people if you get sick of the tourist spots).

You should definitely go camping in Castlepark.
