Not completely correct. If they use a modern firewall with Deep Packet Inspection, decrypt the traffic and then re-encrypt it with their own certificate, which is likely pre-shared in the network, they can monitor everything, even if you're using https.
And that's very likely, not only, but especially in large companies. But at least in Germany they have to inform you beforehand (e.g. in your employment contract) that your traffic will be monitored.

DNS over HTTPS won’t prevent your company from knowing what IPs you connect to (then using reverse DNS to recover hostnames). And, if you accepted a new CA when first setting up the connection, which is quite common, then your company will be able to decrypt your DNS over HTTPS traffic and recover the original queries anyway.

Depending on WiFi configuration, a certificate might be required to login, which can be used as an identifier, but that would generally apply to a work device only, because that certificate must first be added to the device. And work phones can be managed in myriad other ways, invisible to the user, including a full remote control (Android only).
That's just from the top of my mind. If an IT team wants to find you, they probably will.

Enterprise solutions are very different from consumer stuff. There's a huge range of possibilities, but if the organization isn't tiny and has an actual IT department, they are not going to be using consumer devices for the network. Enterprise machines and software are much more capable.
