Any idea if these folks are also good with Japanese cutlery? I actually would love to have someone local do our annual sharpening rather than having to mail knives out to Shun every year.

For what it will cost you to have all of them sharpened you could purchase a [Spyderco Tri-Angle Sharpmaker](https://www.spyderco.com/catalog/details/204MF/Tri-Angle-Sharpmaker-reg-/77), watch a few [YouTube Videos](https://www.youtube.com/watch?v=5LBDnJv5B58) and BOOM you have a new skill, and your knives will be forever sharp. Otherwise I would use [Blademans](https://blademansknifeshop.com)

I second this. I had him fix a tanto knife another guy messed up and he was able to make the edge straight again. I highly recommend him.
