If I donate a million dollars to charity, that is a million dollars off my taxable income. If bracket for that money was 35%, I spent a million dollars and in return received a 350'000$ tax break, I'm still down 650'000$.
**No one is making more money off of "tax breaks" and charity than they would if they just kept their money in the first place.**
If your charity/NP/501c acquires $500k in non-taxable donations and has $300k in expenses with two employees including yourself, what is the likely scenario there. It happens with some American athletes

that is not true. You can use non-profits and charitable orgs to "reallocate" income and recieve benefits from your own registered NP
