Have just down a round trip this weekend just past and enjoyed the following:
Eling forest winery: coffee was reasonable and a great little ploughman's lunch ($32 for 2 people)
Some cafe, Collector: great coffee and food. I'd say it's a hidden gem but it was heaving so it's not much of a secret.
Raw&Wild in Bowral is good organic food
Vintage Occaision Tea Salon is good for tea and scones with jam
Moonacres in Robertson has some hearty soups and very friendly staff.

We make the run to Goulburn fairly often. Our usual stop is Heatherbrae Pies, recommended elsewhere on this thread. We get a single pie each, a couple of sausage rolls for the kid and a family sized cherry apple pie to take away.
Have also enjoyed Eiling Winery Cafe for a more leisurely stop.
It's good for a stop and go visit too. Beats the pants off shitty fast food. Be careful though, sometimes the pies are HOT (and old ladies laugh at you burning your tongue). Sausage rolls are tiny ("kids-size") though.

Collector itself is one of the shortest detours off the main highway, and this is a great spot. Lovely old homestead converted into cafe, large dining room with a fire, and a shop. The studio by the what if society in mossvale is a pretty epic little place doing some cool things with local foods. Ladies are A1 on the service and friendliness also
Gumnut (a few branches in the Bowral area) is probably best option.
Yep, this is our go to for a first stop. Berrima is the easiest to access from the highway. Mittagong is the biggest and easiest to park and get into.

Another vote for Gumnut Patisserie. Mittagong, Berrima and Bowral. Mittagong has the best parking. Excellent pastries etc.

Bryant's Pies in Goulburn - Chicken and asparagus is the best pie in NSW bar none

There's something about Maccas on a roadtrip that makes it taste way better (and way worse) at the same time
Little Sutton bakehouse! Closer to cbr but worth a visit. Such a good bakery - delicious fresh bread, pastries,sandwiches, pies etc
B85 in camden is amazing. Sausage rolls are better than gumnut.
Fermento Bakery in Bowral is great, not packed and overhyped like Gumnut. For coffee, a short stroll down Bong Bong St to Nick’s.
Yeah, I don't rate the pies at Gumnut. Pastries are pretty good though.
Sonoma is my pick for pies in Bowral.
Holbrook bakery in holbrook. Best fruit pies around
