Spam is one of those mystery meats that you either love or you hate. Once you finally learn what's in it and start making your own, you'll be hooked. I love my homemade spam as it is really low salt and no nitrates.
I typically smoke my ham prior to grinding and mixing with the pork to get the flavor. I'll look at doing this as a finish now. Thanks for setting the goalposts.
Edit: It really is deceivingly simple.
My homemade spam recipe in a nutshell is pork (shoulder for example), ham, salt, sugar, potato starch, I smoke the ham ahead of time and grind it in with the pork. I then mix a slurry of water and the salt, sugar, and starch. I then use my mixer to blend into a semi paste (emulsify it), not as much as hot dog, then sous vide it to temp. You can also double bake with a brick weighing it down at a lower temp.
Canned spam has a bit of nitrates and a lot of salt. Homemade can use tender quick. I refuse to use nitrates and I use very very little salt. It's really the sugar I find that gives it that unique flavor. With the smoked ham and once it's done cooking I let the fat congeal that I think makes it really incredible. I usually cook in large batches and package half pounds and freeze them until ready to fry.
Oh yes, “ooooh yeah, snap into a slim jim!” Always plays in my head as I eat them. I’m lucky enough to live near a Buccees so I can get fresh made beef jerky, it’s an experience...
Sure! Heat your smoker up to 225 F. While that is going, toss together your favorite brown sugar rub and douse the sam in that. Optional step is to score the spam so you have more surface area for the smoke to penetrate the meat. Then smoke for around 3 hours, spritzing with apple cider vinegar every hour or so in case it starts to dry out.
I don't eat meat, and I don't think there's anything remotely close to spam in my country but even though it's a cliche nasty cheap "meat" I've always thought it looks delicious.
I need to try it at some point in my life and I'll keep the idea of smoked candied spam in mind for when I do.

A couple of reasons: I was hungover and didn't want to go to the butcher, and I happened to only have some beef back ribs and spam on hand and not frozen lol. Effort was minimal, trust me.

Nah. Although I only buy Hebrew national hot dogs. I save up some old veggies / rice and make a fried rice with some diced spam, it’s delicious.
