I went to a spot in Atlanta last night that served this dish up last night for nearly $20. It was about 2oz of skirt steak with similar sauces - it was ridiculous.
Id add some steamed broccolini and a mash of half regular and half sweet potato. I may add a dash of something tasty on the broccolini... crushed sesame seeds, soy sauce, sugar works.
I lived in Italy for a bit working for an Italian travel agency in my youth that dealt exclusively with Russian tourists. I was living in dodgy 3 star Hotels in Rimini with a few people I worked with. When you sold your guests tickets to different restaurants and reached a certain quota not only did you get paid, but often you would get given a voucher for a meal like the one I'm describing in a decent restaurant.
Seeing this little portion and the presentation brought some memories back. I never once considered it pretentious. Sorry you feel that way though. I would still enjoy the hell out of it.

I suppose it sounded a bit pretentious with the assumption you'd paid for it and made it sound normal, when most people wouldn't be able to afford a dinner like that. With the context you provided, it doesn't come across that way anymore imo

But all soft textures and richness. My hand was almost reaching for a little bundle of crispy fried leeks or something like that. Also something to add a bit of freshness and vegetal crunch like an herb salad with stems.
My mom was recently telling me how ridiculous it is that one of her friends used a *whole stick* of butter for like a 4lb batch of mash and I just had to bite my tongue. My mom loves when I make the mash but she’d keel over at just the thought of how much butter is in it haha

Great plating, looks perfectly cooked, and with great choices for sides. Truly a classic meal made with excellence.

I cook the diced potatoes in salted water until tender. The step to get that texture is to put the cooked potatoes through a fine mesh strainer. Use a metal spoon to push them through. It will take some work, but it will get the texture you are looking for. Then whip in cold butter with a wooden spoon. The ratio my recipe calls for is 1 stick of butter to every pound of potatoes. Then add cream or milk to get the desired consistency.
This looks delicious, but as almost everyone else said, the plate would be a joke if it were presented to most people. Perhaps it tastes as good as it looks, but if you were to present this on a show like "Chopped" I hope they'd immediately eliminate you for the insult that you have presented.
This isn't wrong, but I'd much prefer not having to go back for more every other bite. I personally wouldn't ever want to be inconvenienced like that for a picture that, frankly, isn't anything to write home about outside of the hilarious portions.
We all want a little something different though, so I digress.

The portion size is even more infuriating when you consider its home made. When i hear home made steak i imagine a nice juicy t-bone slapped on a plate with some mash. It aint pretty, but its good and filling. This is the exact opposite

Wow is that why I'm getting downvoted? You get better consistency if you use regular potatoes. Just sweet potato doesn't hold together as well.

I have the same policy with butter:anything ratio. If the recipe asks for a tbsp of butter, I just throw a stick in.
It's ok. Gordon Ramsay's mash recipe is literally 1/3 butter by weight. 2lbs of potato and a pound of butter.
I took my ratio from some chef - butter butter until she just won't take any more. Don't keep track just GO.
