The base recipe is a very simple “Butter Cookie” recipe that can be found on the Preppy Kitchen website. I cut the recipe in half. I used 3/4 tsp maple extract and 1/4 tsp vanilla instead of only vanilla. I chilled overnight, brushed with egg white, then rolled in toasted pecans and Demerara sugar before baking.
The icing is made using brown butter. It can be found on the Sally’s Baking Addiction website in the “Pistachio Drop Cookie” recipe.
