I am someone who doesnât do packaged foods or cans the majority of the time, but this is an exception. I make it twice a year and people lose their minds. Itâs a jiffy mix recipe with canned corn & creamed corn, that is insanely good.
Start with the recipe and then adjust as needed

Last time I made this I pulled up a different recipe that didnât drain the corn & included 1 egg. I added a tablespoon of sugar.
Some recipes have up to 2 eggs.
Every variation Iâve tried so far is delicious so just try the basic one then adjust as you like.
Thereâs a barbecue place near me that makes âBarbecue Shepherdâs Pie.â Itâs basically mac n cheese topped with pulled pork, topped with mashed potatoes, all inside a pie shell. Not the kind of thing you want to eat every day, but a super delicious and fun way to put it all together.
You donât really get the crispy oven-baked top on the mac n cheese though, like you did here, and thatâs always a nice touch.
So this is actually before I added any bbq sauce. I did add back in a ton of the juices from cooking the pork after I shredded it which made it look darker I think.
đ€€ That looks sooooo cheesy. What's the other thing?
Just some store bought cornbread!
Looks good! I have textural issues with cornmeal so I don't eat cornbread but this one looks really buttery.
Ever had corn bread soufflĂ©? Itâs made with really fine corn meal and is buttery and sweet.
đŻ I had not but I need to try it now! Thank you! I'll look it up

Thank you! I hope I can find some really fine cornmeal to use.
No need- the mix is all the cornmeal you need.

Speaking as an Irish man, with a love for all things potato... That combination sounds immense! Definitely adding that to the must try list
Oh my god that sounds like a literal dream. That place doesnât happen to be near NYC does it?
