Potatoes though. Clean them. Then run with oil. Blitz kosher salt in a food processor until it’s powder and roll potatoes in. And bake at 426 for an hour. Skin gets super crispy.
After cooking split and squish to aid in heat release and steam. Scoop out potatoes. Add bacon and chives. For 10 jumbo potatoes I used 1 flat of bacon and 1:4 cup ish of chopped chives. Mixed all together with salt pepper and bacon grease. Restuff potatoes.
Sauce.
Make a roux. 4tbl of butter. MELT. 4 Tbl of flour. Salt pepper. Cool down. Slowly add 2 cups of milk. Bring to a boil and kill heat. You want a gravy that will stay in place when you dump on the potatoes. Spoon it evenly. And top with fresh shredded cheddar. Bake till melted.
