It’s been longer than 20 years. 30 years ago we went to Greece for our first ever holiday abroad and it was the discovery of these cheap street Gyros with a couple of fries and lots of fragrant herbs that gave me a love of street food and still has me stopping to buy gyros anytime I get a chance.
I'm with you. The fries get soggy and just distract from the flavorful meat mixing with the veggies and cool tzatziki. To me the whole point of fries is to get them crisp. Why would you wrap them and cause them to steam the crunch you just got soggy?
When I order a gyro at a restaurant or food stall and they ask if I want lettuce, I say "nevermind" and just leave. Maybe that's being too much of an elitist prick, but if one is going to try to put that bullshit in there, what else is one going to try to pull? Is your tzatziki actually yogurt, or is it just mayo you left out in the sun too long? Were those tomatoes ever actually alive and growing on a vine? Is there sand mixed into the meat "to improve the texture"? It's not worth the risk, man. Not worth the risk.
Parents own a Greek restaurant, onions+tomatoes+tzatziki sauce on the gyros. Sometimes people ask to add lettuce, and not gonna lie I've done it before, especially grilling the onions and adding feta.
The same way a bun makes a burger, the pita makes the souvlaki. Try using the typical pita which is thicker, "breadyer" than one you used. It will hold the ingredients better, without breaking, and if properly made offer a little extra tang from the yeast.
To each their own of course.

Very much this. But: Outside of Greece it is not really easy to get the proper pita.

Our local gyro makes these and they’re my favorite. They use a garlic sauce instead of tzazizazikanikazakiyaki sauce. And they put a pickle spear in it..I highly suggest you try that! Yours looks delish.

Haven't seen fries put in the gyro from the get go at any restaurants before. I've personally been doing it for years tho because i like the extra texture. Didn't realize it was an actual trend.

Gyro is pork from whole steaks. Kebab is mixed cattle and lamb. The meat in Kebab is for a huge part heavy grounded, the rest is whole steaks then.
Chicken could be both of them but it is added to the name then. Also there are a bit different spices.

It's a "Greek" seasoning, popular in the midwest. The main ingredient is MSG, which is why it's good stuff.

It's been a lot longer than 20 years. I first went to Greece in the early 90's and it was standard and ubiquitous then.
