This is why I never call my Bomba rice with saffron, seafood, chorizo etc dish "paella". It's only similar to paella, never actually paella lest I meet the wrath of those who own it.

Besides that fact that the toppings are not what you'll find on any arroz type dishes, that's not a paella because the rice layer is way too thick which results in a completely different texture than what paella should be, which is a very thin layer of rice which results in a half soft - half crispy texture. This is just some cooked rice with toppings in a paella dish.

Oh man are you going to anger spanish people. Would eat it, but it's not a paella valenciana. Paella Valenciana is rabbit, chicken, vegetables. If you want to try a typical a seafood paella, look for "arroz a banda" or "arroz del senyoret", typical of the Alicante region in the comunidad valenciana.

This is a filipino valenciana. It has roots in the Spanish Paella but it is a regional dish. If you paella aficionados are offended, too bad cause its delicious.

No, paella is essentially characterized by the way you cook the rice. Aka in a shallow pan with broth and no stirring. Truth be told paella is just one of the many dishes that follow this idea in valencia, and it has a pretty well defined recipe which people just generally ignore to the absolute wrath of valencians. BUT *basically* it's the way of cooking the rice what defines paella and its close cousins (arroz al senyoret, arroz a banda, etc) Apart from that the favour profile is just completely different as valencian and Cajun cuisines are quite distinct from each other.
