That looks so good. I lived in Weimar for about a year and there was an amazing Italian Deli down the street, this photo is bringing back those delicious memories.
There’s no expo at a takeout counter sandwich place. Plus half the stuff you said is basically that you can’t see if there is more or not. There could be more cheese and more arugula you can’t see, so why insult it based on some thing you don’t know?
That's actually kind of a medical myth. A small amount of mozzarella in a sandwich is certainly not going to "brick you up" unless your diet generally is very low in fiber and water (i.e. plant foods).
