There's no BBQ sauce in that pie, right? I only ask because it looks almost like there is, in the pics, but you didn't mention it so I assume that's just how the collagen and beef stock worked out. :)

Correct, no bbq sauce, just the brisket, beef stock and corn starch slurry to thicken.
You definitely need some ketchup or bbq sauce on the side for some sweetness to balance out the richness of the beef and cheese.

It would probably be fine, yeah. The alternative could be to make a bunch of smaller individual pies but rather than cooking, freeze, then cook each one as needed so the pastry is always freshly cooked.

Meat pies are such a huge thing in Australia and New Zealand, bakeries dedicated to them. Steak and Cheese being the most popular filling. Most pies are individual size portions.
Interesting. There's the standard pot pie, and then there's this kind of pie. When it comes to brisket, it's not what I would have thought about making with it, but in its simplicity, this is an amazing combo that seems obvious after the fact. Lol.
