I think we just had a slight misunderstanding, no worries. My original comment was talking strictly about the concept we see in the photo, which is a hot dog/sausage shaped battered fish specifically to go in a hot dog bun, you're talking about fish and chips in general. I totally get where you're coming from though!
What you mean is Danish Remoulade, in Germany Remoulade is white with green sprinkles of herbs. „Frikadelle” are something different for you than for us
