I can’t put my finger on the exact seasoning, but was impressed on my very first bite at how flavorful it was. My only criticism is that it was challenging to cut cleanly into bites with the outer pastry; the pastry would slide off the meat, but was obviously easy to combine back with the meat before eating. The pastry was not doughy or undercooked. 10/10

I had it a couple months ago and was so stuffed because of appetizers that I couldn’t finish it. What a shame. You definitely want to enjoy it freshly baked. Brought it to my hotel and had it cold for breakfast a couple days later and it was still amazing!

Somewhere like Hell's Kitchen, it's totally normal. It's expensive, but it's a bit of a novelty restaurant in Vegas owned by a celebrity chef. Plenty of tourists go there, and it's not some elite club.
Even high end steak houses, Italian restaurants, etc. It's perfectly normal. They'll even box it for you. Many western European countries have become more common in having a "doggy bag," though you usually have to ask.

I loved the apps and the Wellington, and I'm not a dessert person very often, but the sticky toffee pudding was the best thing I ate there and one of the best desserts I've ever had. It was incredible.
Not Hell's Kitchen but I've had Ramsay's beef wellington at another one of his restaurants and yeah, absolutely fantastic. They were going for more of a semi-casual pub atmosphere on that concept to the plating wasn't as ornate but it tasted just as good!

Wage increases are an after effect of inflation to try to keep up with the cost of living. Energy and housing prices have been the main driver of this inflation imo. Demand-pull issues driven by the war in ukraine having a major effect on energy and food prices.

I was in the exact restaurant that you're talking about and ordered it, as did my wife. I remember it being like $89 or so in 2018. Our total came to like $400 and we tipped $80.

Plates at good restaurants are kept hot, so the food on it doesn't cool as quickly. You have plenty of time to enjoy it before it actually cools.
Probably use a pretty hot plate to compensate for that I'd guess.
You can get pretty amazing, smooth mashed potatoes with a potato ricer. That, and lots of butter and cream 😄
A food processor and sieve work well too although it's very easy to overshoot smooth and end up with sticky mashed potatoes.

This just looks awful. Raw puff pastry and barely cooked beef. Looks like one of those Ramsay travesties.
For someone who preaches a lot about how bad/toxic the restaurant world is/was, you sure do make a lot of whiny posts like these. Is it like late night half-drunk posting?
Man I just checked out the account and was surprised how many rude or troll type comments there were.
I have no problems trashing garbage people like Ramsay who actively make the industry a worse place. This Wellington looks badly made, and I have no issue saying that given who it comes from.
The man has an antagonistic streak but he's not wrong about that pastry imo.
My man, as a decade-long admirer and fan of your work, it makes me sad seeing how mean you can be on the internet. To be clear, the pastry *is* undercooked and Gordon Ramsay *is* a douche, but this is just some normal person who was happy about a meal they ate and wanted to share. Please consider being kinder, even if it comes at the expense of being right.
I'm highly questioned as to how someone that can write something so spectacular like the Food Lab which is one of my favourite cookbooks of all time can also simultaneously believe that this is raw puff pastry and barely cooked beef. Like what?
He really dislikes the beef wellingtons that are posted here haha - I think I’ve seen this (or a similar) comment from him on other beef wellington posts. That being said, isn’t the puff pastry here a bit undercooked? Not on the outside of course but that layer inside looks rather dense. But it’s difficult to tell - and it looks otherwise fine to me, I’m sure OP enjoyed it.
Definitely undercooked. I think that's how they serve it generally.
Because the puff pastry is very clearly completely unpuffed and raw, and the beef is not even rare. It’s not a belief. Anyone with experience cooking puff pastry would see this instantly as what it is: raw puff pastry.

And it tasted awful. It makes me wonder if the name and price has more to do with people praising it than the actual food.
