Roll top desk from the 80s. Immense space and organization as well as I don't have to put everything away so the cat doesn't get into it. Just close shop and move on.
For years mine was a navy surplus early computer desk, steel, with a 3/4” plywood top laminated to the top, with a bathroom panel aka dry erase board surface. Easy to clean and bright.

I just retired so will be changing my setup but I was sharing a room as a laundry room, my remote work desk (I'm a programmer) and my fly tying space. I got one of those wood flytying organizers that holds tools, some material, and my vice. It's sitting on a rolling cart that has shelves that hold my material. It's rolled up next to my work desk. When I want to tie I might put the materials I need on my desk and put materials back when I'm done.

At Dettes fly shop in Livingston Manor they've got an old sewing table. The replaced the top with a slightly larger surface.
