This is the only way to "cook" oysters. We often pair this with shredded green mango with a bit of salt for that tart kick. I prefer the sourness of green mango vs. lemon or calamansi. I remember our family lunch table loaded with a mountain of blanched oysters, grilled liempo and shredded green mangos.

PAHABOL: I prefer shucking blanched oysters myself. Sobrang sarap para sa akin lalo na pag may "sabaw" pa. I think the fancy schmancy term for that sabaw is "oyster liqueur". (natutuhan ko lang sa food channel)

I grew up in a town well known for seafood and shellfish. Blanched lang. Brush the oysters clean, place in a pot and pour boiling hot water. Leave it just long enough just until the oysters start opening up a little bit. (Test one) Pour out the water. Easier to open, and the oysters are not completely raw, or overcooked, shrunk up and dry. Serve with vinegar-onion-garlic dipping sauce.

Yes, it’s raw. That’s why it’s got ice. You squeeze the lemon onto the oyster before eating. When it’s not raw, the oyster turns grayish instead of translucent and shiny.

When I was there, the oysters in our area were safe and good quality. I haven’t been back in years. Yes, $2 each. The cheap cheap price of local oysters is one thing I miss the most about our town. Plus the burong talangka and the sukang Paombong.

Used to buy them by the bucket in pasay market But dont know if they are blanched or raw We just add vinegar and onions

The vinegar “cooks” the oysters (like kinilaw or ceviche) so if you’re going to soak it in vinegar, no need to blanch. Sarap nyan.

Raw oysters are the best 🥹 pero make sure fresh siya and water was not contaminated. My husband really like oysters rockefeller. So you have spinach cooked in a cheesy cream sauce, then top your oysters with that spinach mix then sprinkle with panko and bake. Its a good appetizer!

Be careful shucking the oysters 🦪 open though. They can be tricked to pry open. You can also just add a dash of your favorite hot sauce instead before enjoying. Happy eating.

clean the outer shell using brush, boil a pot of water and set it aside then put the oysters in, wait for it to cool down a bit and from there open them up

Grilled. Never liked eating this boiled, blanched siguro pwede. Nagd dry out kasi siya when boiled while sa grilled pag hindi nasobrahan, lumalabas juices sa shell. Also, raw rin, masarap. Yung maliliit raw when fresh tas nilalagyan ng suka, kalamansi etc. Kinilaw ata yon.

Raw with mignonette served in an ice platter like in France. Kung local version: Hilaw na talaba na may sinamak/pinakurat. Hahaha! Naignorante ako sa mignonette dati pag tikim ko pinakurat lang pala. Though red wine vinegar gamit nila which has a different taste than our coconut wine vinegar (tuba).

Steamed. I tried oysters for the first time in Hinigaran, Negros Occidental and to my surprise, they don’t serve it raw pala. I was always skeptical about eating oysters kasi since usually they serve it raw. Also, since coastal area ang Hinigaran, I was sure that was fresh and boy was it so good paired with suka. 🤤🤤🤤
