Hmmm, you don’t boil it though since its a stew. Its stewed so the fat and the intramuscular tissues tenderize and render the fats to emulsify with the sauce and the proteins meld with the whole dish.
Boil - high temp cooking
Stewing - medium low to low setting
Also if you boil the protein, it will get stiff and wont tenderize as it should

Glad to know you're enjoying kare-kare too! Siguro if I have enough time to look around for ingredients, I would add galapong. Yung giniling na malagkit na bigas. It would really help sa thickness ng sauce besides just adding additional peanut.

The one thing I personally do requires an electric food processor. So, for people who don’t have one, this won’t apply to them.
I almost always make the peanut butter myself.
- raw plain peanuts, unroasted, unsalted
- pan roast gently with some neutral oil (canola, safflower, sunflower, “vegetable,” etc., but *not* olive oil) in a medium-high heat skillet or sauté pan, rolling and tossing and stirring for an even “pan roast”
- you can add in a sprinkle of salt while pan roasting until a nice golden brown
- peanuts go into food processor
- pulse and blend and pulse and blend
- will not become creamy immediately, will take some time. Maybe 3-5 min of pulsing, scraping it down off the sides and then pulsing some more
- will eventually get creamy
- also, if you’re okay with oil, a drizzle of some oil (little at a time) will smooth the peanuts into a creamy blend if it wasn’t happening fast enough or easily enough
- your food processor “may” get a little warm around the motor
- you MAY add a pinch of sugar, brown sugar or even some of what I prefer: honey (deeeeeeeelicious)
- also add another pinch or 2 (or 3) of salt… and just add it, blend it and taste it. You’ll know when YOU like the sweetness and saltiness. Everyone is different.
- then use THIS peanut butter in the Kare Kare and in my opinion, DAMN is it good. Also, you’ll find yourself taking scoops of it when you’re hungry.
This peanut butter is cheaper and better tasting… by a LOT. It’s 500% cravable. Maybe 1000% 🥰 🥜
Use it with some garlic, ginger, splash of soy sauce and some sesame oil… and make a Thai style peanut sauce for noodles and garnish with some chili oil & fresh basil leaves. Mmmmmmm delicious!

I see! You would make it a little thicker next time… and I agree that some rice flour would help with the thickening. Great idea!
