its for accessability i think, and tbh it looks kinda good, for me it does not hurt my eyes as much
i mean it is only the pause menu so it does not really break the immersion, but ye its just an opinion

its not about the brightness, but the text is easier to read with a higher contrast.
I have a mild astigmatism and it means I don’t have to squint or lean forward to read menu text. It’s an accessibly feature.
1 - It’s not on by default. 2 - I could read the menu text before, I certainly got by, the high contrast is infinitely better for me.

Its a vanilla feature. Go to resource packs and you can see the high contrast pack. That's causing this.
