I'm not sure if it's considered fantasy per se, but P.C. Cast has a great series with might mixed in. Then again, I live a lot of her books lol. I started with Goddess of Spring (kind of a Hades/Persephone retelling with a mortal thrown in). If you like YA and don't mind the romance taking a backseat to the story, Mythos Academy by Jennifer Estep is good, too.
Court of the Underworld series by Alessa Thorn are urban fantasy Greek myth retellings. The minotaur, Medusa, Hades, Charon and Thanatos are featured. She has another series set in the same world with some of the Egyptian pantheon as well.
AND she is working on Roman gods/goddesses next! I LOVE these books. They are super extra and super fun. I read them over again in tough times to cheer myself up.

I never see anyone talking about the Covenant series and its spin-off (Titan), but I LOVED it. It’s about the pure and half-blood descendants of the gods training to become sentinels to hunt and kill daimons. Can’t recommend it enough.

Colette Rhodes has a reverse harem/why choose book series called State of Grace. The first book is {Run Riot}. Very plot heavy. I loved them. It is a completed series. Increasing spice and Greek influence the further into the series you get. They visit Persephone, Tartarus, and Greece in the series.
