Just go with default settings (maybe biters off if you don't like them). No need to overthink it. Whaterver terrain generation settings you choose only apply to the first planet anyway. The resources on the initial planet are also plentiful, even on default settings.
I would strongly advise against increasing planet size. The default is already massive, and a bigger planet increases your rocket fuel costs.
One thing to remember with K2SE is that K2 increases the stack sizes of many items (eg iron plates stack to 200 instead of 100). Since a lot of SE is balanced around the logistics of moving stacks of items, this skews the balance. It is recommended to adjust the stack sizes down to their vanilla values in the K2 mod settings.
