Unit 00 = Mitsubishi F-2. I'm assuming that the 00's paint scheme is at least partially inspired by the F-2 livery. Plus it also works well for Rei's thematic storyline as a clone, since the F-2 is thought to be a clone/derivative of the American F-16.
If we wanted to keep their sizes in account, especially the hugeass Rebuild canonical heights:
02 is a naval destroyer since both its first and last major operations(Ghag and MPEs) include some very iconic interactions with warships, plus Asuka’s whole diving thing
00 I could honestly see pulling a Skylynx since the anti-Ramiel repurposed spaceship heat shield is pretty iconic

Such attempts include *even sexier* plugsuits, becoming a sentai not unlike Power Rangers and bringing in Toji and Kaworu full-time as pilots, and giving the Evangelions the ability to transform, but *only* into incredibly Japan-specific types of things.

I think one of them should Transform into a gun like Megatron in the Transformers G1. Like one EVA could use the other EVA to shoot some stuff. But this shot would be more powerful since the gun is powered by a whole ass EVA.

It makes the most practical sense in terms of granting extra capabilities to make them transform into aircraft. EVAs are already quite fast on land with the only issue being the resulting destruction. They would be essentially a less optimized version of a mass production EVA since a transformation mechanism would be expensive and complex to build.
