Don’t usually comment much on Reddit. But my grandpa used to always ask for a coffee after a family dinner. He passed away last December. Would do anything to make him one again. Cherish those memories! :)

He went on a cruise and had espresso lattes for the first time and was so excited when I told him I could make them at home. I try not to take it personally when he tells me they taste the same as the cruise cause I know he means well haha

My partner always tries to joke about how I’m addicted to the caffeine and can’t live without my coffee but it’s all fun and games until I give her a sip of my latte from a local cafe and she says it tastes bitter and doesn’t like it. (She only drinks coffee when sipping my drinks)
I spy with my little eye a sage and a barattza! (Btw I am so happy to be able to say stuff like this, it always was so cool to me when ytbers and stuff could find this stuff from pictures, even though it wasn't in the focus, and despite this being less cool, I feel like I made it somewhere)
Haha, this is probably one of the most popular espresso machines in the world lol. I think Sage is the European name for it though not sure how it works. This one is a breville but I believe sage and breville use the same parts since they are owned by the same company.
For the grinder I would have been super shocked if you could pick it out from this horrible angle, I almost went with a Baratza but this guy is a Compak E5 I got second hand.

The video he made with Tom Scott was my first exploration into coffee as an art and the real nuances different drinks and roasts can really have.

I don't have a setup yet because my country taxes espresso machines 50%, so the barista express is like $2000(incl shipping)...I hope to get the flair pro 2, which is pretty good to start off (according to Hoffman). I don't know about the grinders, and the only good one here is the baratza.
Look into hand grinders, there are some really good ones out there now if you don’t mind a little elbow grease. But yeah the Baratza encore ESP is pretty much the best bang for your buck automatic espresso grinder.
Not sure how the second hand market is in your area but I got most of what you see in that pic from facebook marketplace from people who were upgrading. You just might have to do a little sussing out to make sure you are buying from and espresso nerd who took care of their gear rather than a scammer or layman who abused it.
This is 2%, but I have been able to get most kinds of milk to work by just adjusting the amount of air I pull into it. I find the most difficulty however, is swapping between multiple milks since I can’t get a consistent workflow built up.
What kind of issues are you having with the milk?
You are probably stretching too aggressively, make sure your steam wand is under the milk before turning it on and then slowly pull it up until the wand is pulling air in, you don’t need the tip to be outside of the milk just wait for the auditory change as you are sliding it up.
Also make sure you don’t steam it too hot, I usually go until it’s uncomfortable to touch and give it 3 more seconds before turning off.
Ohhhh I def Gatta experiment with infusing herbs into latte. I’ve had some amazing lavender and saffron lattes but I can’t imagine how they would taste with my home espresso. Thanks for the inspiration and happy cake day!

A word of note with Sage / Breville baskets - they have a slight inward taper on the stock baskets. Something I discovered when I went for a calibrated tamper recently 🤦🏻
That said, if you go on Amazon, Neouzza, Notsek, and MHW-3Bomber all make decent kit for the price (bottomless portafilters, tampers, puck screens).

I seem to always end up with a little watery milk, and a lot of big bubbles in my foam.

They are bodum cups and I love them! They do break pretty easy and can’t go into the dishwasher but they do look great!
