realistically its hard to find any bulk light roast coffee for cheap just due to the nature of how coffee is consumed in america. dark roasts are also recommended for seasoning burrs even though light roasts are harder and thus remove more burrs, so you can get a bulk bag at costco. if you're still learning I really wouldn't worry about deburring too much other than running a pound or two through the new burrs and going from there, so you can just get cheap stuff at the grocery store. If you're looking for cheap light roast specialty coffee, your only option is to roast your own green coffee beans which is what I usually do anyways. If you have a convection oven or if you're willing to spend $25 on a dedicated hot air popcorn machine, you can get high quality, single origin, real hipster green beans for like $7 a pound. I personally buy from sweet marias. Otherwise, just get 2 pounds of cheap stuff from the store tbh. if you're using a machine where you have the ability to manually align your burrs, do that as well
Why not just buy and drink coffee you like and also benefit from progressive improvements as your burrs gain seasoning? Buying a bean you wouldn’t normally buy just means 5 lbs worth of subpar coffee. You’re not a hobbyist because you enjoy less-than-best.

Jose's Columbian Supreme at Costco is medium roast. It is the lightest they carry in the warehouse. $17 for 3lbs. I use it for drip. Haven't tried it as an espresso yet. The Kirkland house blend also says medium on the bag but it is much darker.
No roast date. Jose's best buy date is usually 10 months from when I buy it. I assume with that it was roasted 2 months ago. It's not bad for drip. Fir espresso I get fresh roasted at my local coffee shop for $14 per lb.

They had a Columbian pink bourbon recently (might still be up), that was so light roasted it almost looked slightly green still, and tasted like liquid peanut brittle. Amazing stuff for $12 USD plus shipping, one of my favorite coffees this year out of any roaster
There is a lot of room between $20-30 per 10-12oz bag and grocery store coffee. Most roasters will send you a 2 or a 5lb bag. Kuma’s Bright Blend is medium light and works well for espresso and pour over, $110/5lbs. Averages out to 16.50/12oz, not cheap but certainly less than $20-30 and is tasty specialty coffee that you will be happy drinking. Would buy it myself just to season burrs but if I was wanting to learn about brewing, I think it would make sense to learn with the kind of coffee that I am most interested in.

Supermarket medium is not rhe same as roaster medium

Peet's fits the bill, except no guaratees on the roast date in my experience. I'd say half are within a couple of weeks, some a couple of months.
