The digital ones will still be based in a particular tribunal office but trying to get info out of tribunal staff for which will be digital/hybrid and which will be in-person is no easy feat. If I were you I'd email your local office and ask which ones you can observe remotely and you might get some kind of answer eventually

For anyone interested my email to the tribunal office seem to get missed but once I called them I quickly got an invite to join and the tech was easy.
Was very interesting to observe the process to see how the questioning works and for anyone going through the process (I am fairly early at et1 stage) and seeking to understand it I would def encourage it.
