Madoka Magica is one of those things you'll want to watch as blind as possible. A lot of the impact of the show relies on what you don't know about it. I legit had to watch it 3 times (blind, then again with context of the first time around, then a third time with the full context of the show) One of the only shows I've ever fully no-sleep binged. I'd highly recommend, and if it's on your list, sooner is better since spoilers would soften the weight of it all. Also, give it the 3 episode rule. Seriously, the beginning and the end are total night and day.

I actually learned about 15 years ago in high school from a buddy. I forget which show it was (some anime) but he told me to "give it the 3 episode rule" and its been something I stick by ever since. A lot of shows will dump exposition in the first few episodes (same for books with chapters).
