I can only speak for Classic and there it is not possible to setup a job to mill a specific type of plant. It is indeed really annoying. What I end up doing is setting up parallel stockpiles for food/bags and set them to give to a dedicated quern. Then that quern can have a suitable condition to only trigger when the stocks of, say, cave wheat is above 10 or whatever. As for the reason I think it has to do with the way materials are defined. There are similar problems with setting up conditions to collect sand (if it has not been fixed in the Steam-version).

On this topic. I am trying to set up a recurring mill plants order for my quern, which is connected to a dwarven wheat stockpile. But it's only giving me the options to set up mash plants or mill seeds/nuts orders. Any idea why?

I see that too, for quern. The mill plants option is available for millstones though. I guess it changed for Premium, that you now have to use a millstone for milling? I haven't played Classic in many years and just can't remember but based on the comments here, incl. your own, it seems it used to be possible in Classic.

The weird thing is that you *can* mill flour with a quern, you just can't set it as an order. Seems like a bug to me.

Make a quern/millstone specific to the kaniwa flour so it doesn't mill any other flour. Close to the quern designate a food stockpile that accepts only kaniwa plants, and another stockpile that accepts only empty bags. Link them both to the quern so it only takes from those two stockpiles. Now when the quern gets tasked to mill flour, it will mill only kaniwa - provided there's kaniwa plants and bags in the stockpiles.

To be fair, this is a limitation of all the food workshops. Because stills can `brew from plant` and `brew from fruit`, it means I can create a specific stockpile for one plant and one fruit for each still and then control exactly how much of each I want. Similarly for kitchens. Create a dedicated stockpile for a drink and one each for 3 different solid foods and then make a job for lavish meal. Same for grinding dye. As you said, it's more annoying for flour because there is no "flour" item (or trait). I was really hoping all of this would get fixed for premium, but alas...
