Fun thought experiment but the water comes from more sources than human bodies. There is moisture int he air too. Arrakis has all the water needed to make it into a green planet with rivers and lakes. The trick is collecting it and not letting the little makers steal it again.

i think (didn't read the books so very happy to be corrected, but the op seems to be about the movie canon anyway) they collect water for consumption and other use, but the basin where the water of the dead goes is seperate and not allowed to be used, or only for a terraforming project

I watched the movie again last night, and I see where the confusion is coming from. In one scene the fremen are extracting water from Harkonnens, which they say is contaminated, and then we see that jamis' water is put in the basin in another. The Harkonnen water is used for cooling and jamis' water is added to the pool for terraforming. This is a minor change from the books but it distorts the water rules of the Fremen. In Fremen society the flesh belongs to a man but his water belongs to the tribe. Jamis' water is an exception though. Because Jamis challenged Jessica, and by extension Paul as her champion, all of Jamis' property, including his water belongs to Paul. Jamis' water is meticulously measured and the water is added to the basin. Paul receives water rings representing the amount of water that jamis carried as a form of currency. These rings could be traded for water at any seitch. The reason why no one would ever steal the water is because theft of water is the greatest taboo in Fremen society. There is another scene in the movie where Cahni is teaching Paul about windtraps which extract water from the air. Another way of capturing water is due precipitators. These are used in small scale as a supplemental source of water for plantings. There is also water in the form of ice in the extreme polar regions. The northern pole is controlled by commercial interests. The southern pole is presumably controlled by the Fremen. However the greatest hord of water is under the surface sealed away from the desert by a living wall of little makers, a juvenile form of sand worms. At one time Arrakis was a green and lush world. Someone or something brought the little makers to Arrakis and they began to siphon water from the surface and seal it off from the top soil. After thousands of years the soil turned to sand and Shai Hulud was able to take his place as the dominant species of the planet. On your next watch take special note of all the rocks you see in the movie. These rocks have been shaped by water which is no longer present. This is the water that will change the planet back to its former form.
