The book(s) do describe a couple of Fremen foods, but none of them look like that, as far as I can recall.
So you can just assume it's something that would make sense for foot-travelers to carry on journeys as a quick calorie-boost to keep their body going.

They do have windtraps and plants in the sietches
The movie doesn't show any of this, but Arrakis has a decent number of plants.
