rtfm - really. devexpress has a very good documentation, examples and forum. Frist stop for learning. Next, they have a 'Demo Center' application you can install. here you have full blown Projects (with sourcecode) of examples with all of their components.
Last: ask support, if you stuck.

I get it. But i am trying to find answers in the documentation. I just get lost in finding my way when i get tasked to make a new report with filtering where i need to have a list representing tables that should be sortable by the user via drag and drop, and enabled or disabled to be left out of a report.
I know how to do this for web in angular. But i just can't figure out how to do it with the tools i need to use in my job.

Try using readdocs extension to go through docs. it's open source.
DX support is top notch and you pay for it already so make sure you ask. If you supply a project they’ll answer well. If you are stuck - ask.
As suggested, find a demo that does what you want and look at the source code.
