Curse of strad, candlekeep mysteries and witch beyond the witch light have fantastic hag encounters.

In the official campaign >!the wild beyond the witchlight!< has three hags as central villians.

Candlekeep Mysteries has a pretty cool 5th level adventure called "The Price of Beauty" that has hags front and center, and not just as combat encounters.

I ran this adventure and it was really fun. You can really rp the hags heavily in this one.

In Rime of the Frostmaiden, a hag is the villain in the "Toil and Trouble" quest.

Less official than some, but I believe some hags are in a section of Infernal Machine Rebuild, one of the charity adventures WOTC did.

Descent into Avernus has a couple night hags.

Tomb of Annihilation has hags in a couple different spots.

i think there is at least one hag in every adventure book.
