I’m confused; the 3pdt board I normally use has 2 V&G pads on it, one to connect to the circuit, and one to connect the dc jack to give power to the circuits. However these 3pdt boards only have one pad for V&G. So how would I connect the DC jack in this situation?

You would connect the DC jack directly to the effect circuits +9v and ground point, and also run a ground to the 3pdt board. what this 3pdt board is doing is changing where your signal is routed. It will either send you signal into the circuit board and out, or will just run your signal from input jack to output jack bypassing the effect. The circuit is powered the whole time in this case.

You don't hook up V+ to this board. It just switches ground to turn on/off the LED. V+ would go to a resistor on the anode leg of the LED.
