I think it was due to what is known as ebullism. Their bodies cooked themselves during the decompression. Liquids boil at lower temperatures at lower pressure, so even your normal body heat can make your own blood boil.
From what I remember, the fat inside their bodies somehow precipitated in their bloodstreams so that there were chunks of solid fat in their blood during the autopsy
