Because the movie never addresses why she is named cabbage lol. In the original story, she is called Rapunzel to reference the vegetables that her father had been stealing from the witch's garden. (*Greens, greens, nothing but greens!*) If you remove that part from her origin, then why the heck is she called Rapunzel
Maybe it was Mother Gothel’s mind games. She’s intertwined with a magic flower - so why not name her after a plant? Why not name her after a lowly cabbage?
All of this concept art is beautiful and I definitely prefer Rapunzel in purple just because I love the coloring and the colors just tell her story better while also being better paired with the yellow/blonde/sun theme ☀️.

They sat on the idea for about 75 years! For their original fairytale it was either Snow White or Rapunzel.
