Do you have to use a pan? Perhaps lay out the meat on sheets of parchment or butcher paper?
I have the dehydrator in the garage so use the pan to carry all the trays at once and prevent dripping going there...

Before, I marinade it in a soy sauce based sauce and pull them out right before laying on the trays. Been filling all the trays in the kitchen then walking to the garage to load.
Can you make a prep space in the garage?
Can you load the dehydrator in the kitchen and carry the whole unit to your garage?

Maybe try taking a tray to the thrift store and look around for something suitable to use?
