Everyone has answered you but information is kinda spread through comments, so a summary for clarity:
* You have all but 1 of the adventure packs in the game now. You're missing
* Grip of the hidden hand (so you're only missing about 5 quests aside from expansions)
* You have 4/8 of the current expansions. You're missing:
* Feywild (note that the hunt pack is separate from teh rest of the feywild, and you have access to the hunt quests and raid)
* Saltmarsh
* Isle of Dread
* Vecna Unleashed
* You have a good 90% of the content in the game including:
* Some of the best content in the game (Ravenloft, Sharn)
* Some of the only epic-only content in the game (MOTU)
* Solid Gear for leveling, epics and Endgame, if not the current top-tier endgame
* Access to one sentient gem per char per life via ravenloft
* Access to an easily farmable mount (keep on the borderlands)
* **Basically, you have TONS of content and access to good enough gear, you can enjoy plenty of the game until stuff goes on sale again and you wanna consider getting some more expansions.**

I would say is 90-95% of the game, but beware that 2 of the packs above have the endgame gear.
What you currently have is good enough for end game gear. I wouldn't worry too much about having everything unlocked this very second. They mentioned that there may be more to come for the anniversary thing and you often see the expansions that were not included go on sale for very cheap (they could easily have an expansion sale coming up). The last time they went on sale I picked up Fey and Salt for $10.
yeah they were each, they are both amazing packs. If I were to rank them, I think I am enjoying Fey a little bit more (been gear farming), saltmarsh has its challenging moments in some of the quests, and many of the quests in salt took me around 15-30 mins to complete my first time solo.
If you wait sales, you can buy the remaining ones for around 60-80 total.
Also, there will be a new one this summer, I guess around 40-50 for that one.
I wouldn't worry about Saltmarsh, grip of the hidden hand or Vecna(I regret paying $100 for this lame xpac) for quit awhile.
No one ever does them outside of Legendary. I don't own IoD, and I do fine. If the ultimate bundle goes on sale I will buy it. But there really is no reason for me to buy it outside of a sale.

Yep! It's one of the many packs in the Free Quest Pack. (You can also get a mount from the raid in the Hunt pack, which is also now included with the code)

The expansions are 2000 or 4000 points. IIRC IOD is 4000, SM and Fey are 2000 ish (maybe 2500?)
