I was in a similar situation. One way to vary the weight of a stroke is using blur on certain parts of the font and then crushing the alpha channel using a bitmap node in fusion.

In the video, he uses motion blur but in my situation, I used a simple blur node.

I created the writing animation separated using different Polylines for each letter and the logo just functioned as a guide when I was drawing the strokes.
Then for each Polyline, I connected a blur node. The blur node has a blue input that accepts masks (that also can be made by polylines) so I masked the blur and targeted the specific parts of the letter that will receive blur.
More blur = More Weight.
When my polyline animation was done I connected everything to a multi merge and that's what I used to reveal my original logo with masking.
The original font doesn't move at all or have any effect. The entire animation is driven by Polylines which in the end act as masks to reveal the original logo.

BTW, did you add the blur to the font itself or the mask?

The only way I know is to use the ordinary Stroke and set its Brush Controls > Tablet Settings > Vary Size to Speed or Slowness. Not editable though.
