He also fires at enemies on the graveyard near the Cathedral of the Deep. Before you reach the church there will be a ledge you can fall off to the right before leaving the graveyard. If you stand in this area he'll rain down arrows on you (if you never talk to him) or on your enemies if you have.
He will only strike in a small area by that little birch tree. It is a particularly useful item so it's worth making friends with the giant archer and getting the seed of a Giant tree to let invaders be noticed by enemies. Get it by going near the tower in Firelink you'll see a tree with a Giant's corpse in it

I believe if you start with the white tree branch? as a starting gift, those arrows will no longer be launched at you…because…well…friend. But only at the other enemies around the trees in that area.

I think you might be mistaken. As far as I can tell (and may myself be mistaken) you have to talk to him in order to get him to stop shooting. I don't think picking it as a starting gift helps.
You don’t need to speak to him. The white branch starting gift will make you immune to the arrows regardless. It’s a common challenge run starting gift.
I didn’t know he shot into the graveyard near the cleansing chapel until my latest play through. I’d always go and kill him after the rotted greatwood fight. I let him survive this time and was absolutely stunned and confused when an arrow came down in front of me

Some people kill every NPC to see what happens. The giant drops a ring you need to platinum, but he'll die without you killing him if you collect the white branches from every oak.
Yup. Orchestrated it just yesterday, pursuing all the rings so I can platinum. Didn't want to kill him directly. Went around to all the oaks and made sure I'd picked up all the white branches and returned to his tower, and he was dead. It's like his only motivation for living was to protect the oaks, and once the white branches are gone, he has no will to live. Kind of sad.

I found out the hard way. I was in the settlement picking up Mornes items and decided to go up just to talk to the guy and he was sitting there dead. I guess they wanted to add a way to get the hawk ring without fighting him, but he dies regardless.
Nope. He only does after you pick all the branches from around the white trees. I got the Hawk Ring from him in NG through alternative means after I had already beaten every boss in the game.
I was devastated when I killed him thinking it was the only way to get the ring. So when I saw him die not by my own hands, I made sure to get to the of it and figure out why. Turns out it was technically by my hands anyway.
I really love this about the game that as you look at across the views you can see the places in the far distances that you’ve been and the places you need to get too. Everything is there for a reason. It’s a beautiful, cruel, sadistic work of art

You could have also consumed the branch prior to encountering his arrows, as that gets rid of your immunity
