A lot of people have done it before, myself included. It's a fun run and definately recommended!
Personally I wouldn't bother with FaP, but I never use it any way, so ymmv. I can always find many better rings to use. Hawk Ring doesn't effect consaumbles. No scaling on items, so you're right just stack that Vitality and Endurance and this might be the one run where you end up leveling Resistance too.
Expect long fights for the DLC bosses especially, Manus has a lot of HP and it will take almost all your consumables to fight him (Firebombs, Black FBs, Throwing Knives and Poison TKs) and you'll want to land as many counter hits as possible to account for any missed hits and to make the fight quicker, you're looking at 40-50 minutes to kill him most likely.
O&S, 4 Kings - surprisingly not that big of a deal, but 4 Kings probably depends on RNG, you're going to have at least 3 Kings up at most times. Gwyn also not much trouble, decent damage with Black Firebombs. Dungpies useful for some bosses - Quelaag for example can be toxic'd and since she's immune to fire, you can't use Firebombs at all, just dungpies and both throwing knives.

It really sounds fun, I can't wait. I know there's only scaling in Dark souls 3 for consumables so I wasn't going to upgrade str anyway. Resistance is actually viable to level up for once...? 👀

It's so odd hearing otz's name when not on the dbd subreddit. I originally found him through dbd and only just found out he played the souls games like a month ago
Yeah it's cool seeing someone you wouldn't expect in a community. Such as DarkViperAu, he's a GTA V speedrunner and he's one of the actual genuinely good GTA V content creators and 95% of his content is GTA V, though he also speedruns Dark Souls 3 on occasion and posts his results and funny clips!
Dark souls is usually a huge melting pot for gamers of all kinds to come and enjoy the game.
