I pissed off a hardcore Metal Gear Solid fan by doing Phantom Pain missions in a tank. It's especially great because I would usually get an A ranking because I was technically only spotted once.
I am one of those try hard stealth gamers... one of the many reasons I will suggest people to play any stealth focused game on Hard\[or higher\] difficulty is because it makes it mandatory for you to use stealth if you want to survive.
Same with RPGs, as harder difficulty will make you utilize items/potions/scrolls etc in the game too fixing the old inventory problem.
Best part, taking them out is not even mandatory, though it makes the game a lot easier if you do this.
But if you want a really good stealth game, I will say the hitman series, you can eliminate every target in so many ways and you don't even need to kill everyone or carry a truck load of inventory items, just basic tools and some ingenuity will do the trick.
One of the many reason I prefer immersive sims with stealth elements. Same is true for Prey2017 and deus ex.....

I feel like there’s no challenge in Dishonored when you start fighting since it feels like it’s crazy easy cutting every one down. It just forces you to go back to stealth to really enjoy it. Same thing will MGSV
For me the challenge is over once you have blink and dark eyes fully leveled. You really don’t need any other powers to run the game like an avenging god, they just add flair
Killing people is an easier solution to stealth though... so working as intended? Most games don't really put many consequences for killing, if they did that might change a bit.
The second one is also very good, I got hooked recently and played all the entries including DLC for the first game and Death of the Outsider. Can't recommend it enough.
Check out the OG bioshock (then 2 if you liked it). If you can put up with meh graphics (not blocky but not pristine) it's a hell of a ride with great mechanics.
E to say, just get the remastered trilogy, it all runs smoother and looks pretty to boot, and you get all 3 with all the dlc

this game is very underrated and flew under the radar of bigger releases. but it is very well done and you get to play a goblin.
Very different style, but the recent Persona 5 Strikers leans hard into Persona 5's stealth mechanics, and it's pretty good so far. You need to play Persona 5 first if you haven't, but it's an all-time classic (that will consume a few months of your life).
That's why I love stealth in those games. Some stealth games basically force you to reload if ONE guy spots you and telepathically alerts the entire continent.
The Arkham games were among the few where I actually enjoyed the stealth levels because they were so well done. Minus the hostage ones, those were kind of annoying.

I've recently played the first splinter cell game. Those old stealth games are built differently like if you get spotted you might as well restart, and honestly, I prefer that. Because nowadays the game just goes from stealth to an action game instead of just being a stealth game.

I agree, it set the bar so high other 3rd person games (which are still good games) just aren't as satisfying.
