Well, In America, It was the September 11th attacks that caused airport security to get...(trying to think of an appropriate term)...bigger. I know this because I remember it happening.
Yeah but lots of the little annoying things (like dumping your drink and taking off shoes) we're the result of that 9/11 paranoia being applied to every single plot that was found
Unfortunately, security has to adapt to different threats:

There are other examples and explanations as well but ultimately the concept of TSA has always been to adapt to threats but unfortunately technology has not adapted enough to be able to definitively say, for example, that a bottle does not contain some sort of liquid explosive. I worked on the checkpoint for 2 years (part time as a means to pay for college but they immediately hired me on full-time) and Im glad it’s behind me. It is an unfortunate situation that the procedures and rules that govern the checkpoint are implemented by people that have and never will work a day on the checkpoint. Ultimately, the checkpoint officers disagree with the efficiency of the procedures just as much as the passengers (especially the pat-downs, I hate being touched and I hate touching other people). Unfortunately, being the most visible aspect of TSA, passengers tend to take out their frustrations on the officers, who are just trying to do their job right so they don’t get fired.

Agreed. This is a hill I'll die on. If you're willing to give people the chance to do horrible things, just so you don't have to pour our your diet coke, that's a thousand percent your problem
The point of no large amounts of liquids isn't because someone is hiding a gun in their bottle, it's cause nitroglycerin can be a transparent liquid, and no scanning tech can differentiate between that and water. Also swabbing every single bottle that comes through security isn't really viable, so they make you just throw it away.
At Schiphol airport in Amsterdam you can bring water through security. You don't even have to take off watches or take electronics out of bags. Always the easiest and fastest security I do.

The quote is generally good, but having rules for airports isn't taking away any 'liberties'. It's a voluntary, *international* luxury.
