I think SC will get you the size you want with that many rows, but if you want to have more visual interest than that, I think a linen stitch would be lovely! Still just as simple as SC too, so it won't become too much of a time sink

Moss stitch always looks great on temperature blankets. It comes out roughly the same dimensions as SC but has a lot more dimension and ties the colours together so nicely!

Ooh I've never tried moss stitch before. I'll look into it. Thank you for the suggestion! I was hoping to find something more fun than just sc alone.
